Leftover ham is too delicious to waste. The pretty slices make great sandwiches, but what should we do with the not so pretty hunks that are left? There are so many great options, but this cheesy broccoli and ham casserole is one of our favorites.
Preheat oven to 400°F and grease a 9×13-inch baking dish.
Boil noodles according to package directions to al dente, then drain and pour into greased baking dish.
Melt butter in a saucepan. Cook onion in butter until tender. Add flour and cook for a minute or two.
Pour the chicken broth into the pot while stirring. Add the milk and continue to cook until it begins to thicken, stirring frequently. Taste and add salt and pepper to your liking.
Spread ham and broccoli over noodles, then pour the sauce over the top of it. Sprinkle with cheese.
Bake in preheated oven for 20 minutes or until bubbly and cheese is melted.
