Brownie cookies are super chocolaty with a rich fudgy center. The best part is they only take a few simple ingredients and a few minutes to put together.
Preheat oven to 375℉ and line cookie sheets with parchment paper or silicone baking mats.
In a medium mixing bowl, stir together brownie mix and flour until combined.
Add the eggs, oil, and vanilla. Mix until combined. It will seem like there isn't enough liquid at first, but if you keep stirring it will come together to form a dough. If it is still too dry to incorporate all of the dry ingredients after a minute or two, add an extra Tablespoon of oil.
Stir in the chocolate chips. Scoop about 1 Tablespoon balls of dough onto the lined baking sheets, place at least a couple inches apart.
Bake for 8 minutes, then cool on the cookie sheet for 5 minutes before moving to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week or freeze for longer storage.
