Apple Coleslaw
This apple coleslaw is fresh, bright, and full of the nicest crunch. A light honey-mustard dressing and crisp apples give it just the slightest hint of sweet. It is perfect on its own or piled high on pulled pork. It bridges that gap between warm fall flavors and a salad that still hits on a hot day.

Ingredients
- 4 Tablespoon honey
- 4 Tablespoon apple cider vinegar
- 1 Tablespoon mustard
- 1 teaspoon salt
- 2 Tablespoon mild flavored oil vegetable, canola etc.
- 1 pound bag coleslaw mix
- 1 large apple chopped
Instructions
- Whisk together 4 Tablespoon honey, 4 Tablespoon apple cider vinegar, 1 Tablespoon mustard, 1 teaspoon salt, and 2 Tablespoon mild flavored oil.
- Stir in 1 pound bag coleslaw mix and 1 large apple (chopped), tossing to coat.
- Refrigerate for at least an hour, stirring occasionally to keep the dressing distributed.
- Serve cold
Notes
This is a great place to use a grainy mustard, honey mustard, or Dijon mustard. Use whatever mustard you like or have on hand.
