Mini strawberry fruit pizzas are built on chewy homemade sugar cookies. Top them with a slightly sweet cream cheese spread, fresh berries and an optional pop of lime zest for a super tasty treat.
Stir together the flour, baking powder, and salt in a mixing bowl. Set aside.
In a separate bowl, cream together butter and sugar until fluffy.
Beat in the egg and vanilla extract.
Beat the flour mixture into the wet ingredients, until just combined.
Turn the cookie batter onto a piece of parchment or plastic wrap and form into a log. Refrigerate for 1 hour.
Preheat your oven to 350°F.
Slice the sugar cookie dough into ⅓-½ inch slices and arrange them an inch apart on a baking sheet.
Bake for 10-12 minutes and allow cookies to cool on a cooling rack to room temperature.
Mix together cream cheese, sugar and vanilla until smooth.
Spread about 1 Tablespoon of cream cheese mixture onto each sugar cookie.
Arrange a few slices of strawberries over the cream cheese.
Sprinkle lime zest over the strawberries.
Serve and enjoy!

The cookies can be stored in an airtight container at room temperature for several days.It is best to wait to assemble the fruit pizzas until closer to time to serve the cookies. Store any extra prepared fruit pizzas in the refrigerator for up to a couple of days.Alternatively, to make a large cookie tart (similar to a fruit cookie pizza), shape the cookie dough into a disk before refrigerating for at least 30 minutes. Roll or press the dough out to 14-16 inches in diameter on a round baking pan or pizza stone, then bake as directed in the recipe. Allow to cool to room temperature in the pan before topping and serving.
