Celebrate the fact that strawberries are starting to come into season by making yummy mini fruit pizzas. They are a smaller version of the classic fruit topped dessert that are a great way to enjoy a taste of spring.

Growing up two of my favorite desserts were fruit pizza and strawberry shortcakes. These fun cookies are kind of like the perfect combination of the two.
They would be a fun addition to your Easter dessert buffet. Or serve them at a party or BBQ.
Making the sugar cookies
A slightly chewy sugar cookie is the perfect base for a fruit pizza. Rather than making one big cookie, make about 12 smaller cookies.
The dough comes together much like you would expect. Cream the sugar and butter together then add the flour etc.


Roll the dough into a small log and wrap it in plastic wrap. Refrigerate the dough for at least an hour to let it firm up.
You can make the dough a couple of days in advance if you want to spread out the prep work. In fact, a lot of people say that a longer chill time helps to develop the cookie flavor even more.
Slice the dough into disks and bake them until just set for chewy cookies. Bake them until they are a light golden brown for a crisper cookie.
Allow the cookies to cool completely before you top them. You can even bake the cookies advance and freeze them for several months if you want.
Topping your cookies
A little bit of cream cheese will both add creamy texture and a bit of tang while also giving the strawberries something to stick to. Just mix cream cheese with a little bit of sugar spread it over the cooled cookies.
Top the cream cheese with slices of fresh strawberries. If desired, add a bit of fresh lime zest for a bit of citrus pop!


You can assemble all of the cookies and serve them finished or set everything out and let people make their own. You can feel free to set out more fresh fruit than just strawberries if you would like, it’s a great chance to be creative.
Just be careful not too add the berries too far in advance. Like any fruit, they can weep a bit and get soft if they are out too long.
Easy adaptations
If you aren’t in the mood to make cookie dough, grab a log of sugar cookie dough from the refrigerator section of the grocery store. This easy fruit pizza version can be ready to be enjoyed in no time at all.
You could also pick up a tub of cream cheese frosting if you want. Though you know I am a pretty big proponent of homemade frosting.
It only takes a few minutes to make and your desserts will taste so much better! In my opinion it is worth the effort.

Feel free to play with the fruit toppings. Dice a kiwi or toss on some blueberries for fun twists.
Raspberries or bits if mango would also be delicious. You could even drain a can of pineapple chunks and add them with the strawberries. So yummy!

Mini Strawberry Fruit PIzzas

Mini strawberry fruit pizzas are built on chewy homemade sugar cookies. Top them with a slightly sweet cream cheese spread, fresh berries and an optional pop of lime zest for a super tasty treat.
Ingredients
Cookies
- 2 cups all purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
Topping
- 8 oz. cream cheese, softened
- 1/3 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1 quart strawberries
- zest of 1 lime
Instructions
- Stir together the flour, baking powder, and salt in a mixing bowl. Set aside.
- In a separate bowl, cream together butter and sugar until fluffy.
- Beat in the egg and vanilla extract.
- Beat the flour mixture into the wet ingredients, until just combined.
- Turn the cookie batter onto a piece of parchment or plastic wrap and form into a log. Refrigerate for 1 hour.
- Preheat your oven to 350°F.
- Slice the sugar cookie dough into ⅓-½ inch slices and arrange them an inch apart on a baking sheet.
- Bake for 10-12 minutes and allow cookies to cool on a cooling rack to room temperature.
- Mix together cream cheese, sugar and vanilla until smooth.
- Spread about 1 Tablespoon of cream cheese mixture onto each sugar cookie.
- Arrange a few slices of strawberries over the cream cheese.
- Sprinkle lime zest over the strawberries.
- Serve and enjoy!
Notes
The cookies can be stored in an airtight container at room temperature for several days.
It is best to wait to assemble the fruit pizzas until closer to time to serve the cookies.
Store any extra prepared fruit pizzas in the refrigerator for up to a couple of days.
Alternatively, to make a large cookie tart (similar to a fruit cookie pizza), shape the cookie dough into a disk before refrigerating for at least 30 minutes. Roll or press the dough out to 14-16 inches in diameter on a round baking pan or pizza stone, then bake as directed in the recipe. Allow to cool to room temperature in the pan before topping and serving.
