Funfetti buttercream is a tasty vanilla frosting loaded with colorful sprinkles. It is a perfect way to coat cake layers, cookie bars or funfetti cupcakes. The rainbow jimmies make this frosting extra fun for birthdays and special occasions.
Beat butter using paddle attachment until it is smooth and creamy. Add shortening and mix until combined.
Add powdered sugar, milk and vanilla, mixing on low speed until combined.
Turn mixer up to medium speed and beat for at least two minutes. The frosting should be light and fluffy. Add more milk or powdered sugar if necessary to reach your desired consistency.
Fold in the sprinkles by hand to keep them from breaking up to much and use on your favorite desserts.
Notes
Buttercream can be stored in an airtight container at room temperature for a day or two. Store it in the refrigerator for up to a week or the freezer for several months.
