Peaches and cream baked oatmeal is a perfect breakfast option. It is soft and flavorful. Make it on the weekend and eat the leftovers throughout the week.

Ingredients

old fashioned oats

brown sugar
or honey or maple syrup

ground ginger

ground cinnamon

baking powder

milk

cup
plain yogurt
or vanilla yogurt

vanilla

peaches
diced
Instructions
Preheat oven to 350°F and spray a square baking dish.
In a mixing bowl, combine milk, yogurt, eggs, sugar, and vanilla.
Stir in oatmeal, sugar, spices and baking powder.
Fold in peaches and pour into greased pan.
Bake for 35-40 minutes or until set.
Allow to cool slightly before serving.
Notes
This recipe works great with fresh peaches (use 2 good sized peaches.) You can also use frozen peaches or even drained canned peaches.
