This classic wilted lettuce salad with hot bacon dressing is the perfect way to enjoy fresh leaf lettuce. The dressing is a little sweet, tangy, and savory all at once—and the bacon doesn't hurt!
Thoroughly wash and dry 8 cups leaf lettuce, use your salad spinner if you have one. Then place in a large salad bowl.
In a large skillet, cook 6 slices bacon until crisp. Remove the slices of bacon to cool on a paper towel, but leave the warm bacon grease in the pan.
Thinly slice 1 small sweet onion and cook in the bacon fat over low heat until it begins to soften.
Carefully stir in the vinegar¼ cup apple cider vinegar, ½ teaspoon salt and 4 Tablespoons granulated sugar until the sugar dissolves. Add 2 Tablespoons ketchup if you’d like (we like it both ways!)
Chop or crumble bacon and dice the 2 hard boiled eggs and place in serving bowl with lettuce.
Pour warm bacon dressing over the salad and toss to coat. Serve immediately.
Notes
This dressing is also great on spinach. Use your favorite greens and have fun experimenting.
