This homemade muffin mix is spiced with cinnamon, cloves, nutmeg, and ginger. They taste amazing and are so simple to make. Keep a few jars of spiced muffin mix for yourself and give the rest as homemade edible gifts.
In a medium bowl stir together the 1¾ cups all purpose flour, 3 Tablespoons granulated sugar, 1 Tablespoon baking powder, 1 teaspoon ground cinnamon, ½ teaspoon grated nutmeg, ¼ teaspoon ground ginger, ¼ teaspoon ground cloves, and ½ teaspoon salt.
Spoon the mix into a clean pint jar or other 2 cup container. Press down slightly if needed to make it fit. Securely fasten the lid on the jar.
Add a tag or label with the baking instructions for later. Store at room temperature for up to a couple of months or freeze for up to a year.
To make the muffins
Preheat oven to 400℉ and grease a 12 well muffin tin or line the wells with cupcake liners.
In a medium or large bowl, stir together the ¼ cup melted butter, 1 large egg, 1 teaspoon vanilla extract, and 1 cup milk.
Add the contents of 1 jar spiced muffin mix. Stir until just combined.
Use a large cookie scoop to transfer about 3 Tablespoons of batter into each of the 12 wells. Or spoon the batter into each of the wells until they are about ⅔ full.
Bake for about 15 minutes.
Notes
These muffins are just lightly sweet. For sweeter muffins, add an extra Tablespoon or two of sugar.
