If you like Tex-Mex flavors, you are going to love this southwestern chicken pasta salad. It is a great make ahead salad that is hearty enough to eat as a meal but could also be served as a side dish. The creamy dressing brings together the pasta, chicken, beans, and veggies into something flavorful and fabulous.
Cook 1 16 oz box pasta to al dente according to the directions on the box. Drain and rinse with cool water. Set aside.
In a large bowl, stir together 1 cup mayonnaise, 1 cup Greek yogurt, 2 Tablespoons lime juice, and 1 1 oz. packet taco seasoning.
Add the 2 cups chicken, 1 15.25 oz can corn, 1 15 oz. can black beans, 1 cup diced tomatoes, ¼ cup finely diced red onion, ¼ cup chopped cilantro, and ¼ cup diced pickled jalapenos. Stir to coat.
Stir in the cooked pasta.
Cover and chill for at least an hour before serving.
Store leftover in the refrigerator for up to 4 days.
