Smoked bacon wrapped pork loin is easy to make on your pellet grill. This three ingredient recipe takes almost no effort. The waiting is the hardest part.Don't worry if you don't have a pellet grill, I have included grilling directions too!
Preheat pellet grill to 250℉ and soak toothpicks in water.
Generously season all sides of the pork loin with your favorite rub or spice mix.
Wrap the pork loin in strips of bacon, securing the bacon with toothpicks as you go.
Put in center of pellet grill and cook for about 2½ hours, or until the center reaches 145℉.
Move to sheet pan. For crispier bacon, place under the broiler for 2-3 minutes.
Let rest 10 minutes before slicing and serving.
Store leftover in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
Grill Instructions
Soak skewers or toothpicks in water.

Sear over high heat (direct flame) on both sides.
Turn off one side of the grill and bring the other down to a medium flame.
Cook over indirect heat (keep meat on the side that is off) for 45 minutes then flip over.
Cook another 45 minutes over indirect heat, or until the center reaches 145℉ or your desired doneness.
Remove from grill and tent with foil for at least 10 minutes.
Slice and serve.
Notes
Use your favorite rub. We like to use either a BBQ rub or Jerk seasoning. However, there are so many flavors that would be fabulous. Mix and match your favorite spice blends.
