Spray slow cooker insert with non-stick spray. Add the 1 onion, 2 pounds boneless skinless chicken, 2 teaspoons lemon pepper seasoning, and 1 teaspoon dried oregano leaves. Cover and cook on high for 4-6 hours or low for 6-8 hours.
