Lemon Roasted shrimp is such a super simple recipe, but so delicious! Try roasting your shrimp for a fast and flavorful appetizer or entrée. With 5 ingredients and only 6 minutes in the oven, it doesn’t get much easier.
Preheat oven to 400° F and spray two rimmed baking sheet pans.
Toss 2 lbs shrimp in 2 Tablespoons extra virgin olive oil, 1 Tablespoon lemon juice and a generous sprinkling of salt and pepper. Let sit for about 5 minutes
Spread shrimp over prepared pans.
Cook for 5-8 minutes or until pink. Be careful not to overcook them.
Serve warm or place in the refrigerator to serve as cold shrimp cocktail.
