Roasting shrimp is a quick and easy way to get them on the table. Add a spritz of key lime juice and you are really in for a treat. They are tasty on their own, but make a little key lime butter for dipping to take them to the next level. You will be licking your fingers as you go!
Preheat oven to 400° F and spray two rimmed baking sheet pans.
Toss the 2 pounds raw shrimp in 2 Tablespoons extra virgin olive oil, 1 Tablespoon Key lime juice and a generous sprinkling of salt and pepper Let sit for about 5 minutes.
Spread shrimp over prepared pans.
Cook for 5-8 minutes or until pink. Be careful not to overcook them.
Serve warm or place in the refrigerator to serve as cold shrimp cocktail.
Dipping Butter
Melt 3 Tablespoon butter and stir in 2 teaspoon key lime juice, 4 dashes hot sauce, and 1 pinch salt.
