Seafoam Salad
Seafoam salad is a vintage classic that you may find served as a side dish or dessert in the Midwest. It is a lime Jello fluff salad with tasty add-ins like pineapple and fruity marshmallows.

Ingredients

ounce
box lime Jell-O
16
ounces
Cool Whip
or similar
20
ounce
can crushed pineapple
undrained
2
cups
fruity mini marshmallows
1
cup
sour cream
1
cup
sweetened shredded coconut
Instructions
In a large bowl, combine the lime jello and whipped cream. Stir until no white streaks appear.
Add the remaining ingredients and stir until combined
You can serve the salad immediately, but it is best if it is chilled first. Cover and refrigerate for at least an hour, but overnight is even better.
Garnish with additional whipped topping, marshmallows, fresh lime slices, and/or a cherry if desired.
Notes
Store in an airtight container for up to 5 days in the fridge. Freezing is not recommended.
Do not prepare the Jello before using. You only need to use the powder.
Want a stronger lime flavor? Drain the crushed pineapple before adding to the bowl and add in 2 tablespoons lime juice.
