This is THE savory pie to beat all savory pies. It would be perfect for brunch, a fun lunch or as a hearty side. Spinach and feta make this super creamy and delicious!
Prepare 1 pie crust and place in pie dish. Cover and place in refrigerator to chill until ready to use.
Preheat oven to 350° F.
In a large mixing bowl, beat 16 ounces cream cheese until it is smooth. Add the 3 eggs, one at a time and beat until completely mixed.
Squeeze as much moisture out of the 10 oz frozen chopped spinach as you can and add to cream cheese mixture.
In a skillet over medium-low heat, melt 1 Tablespoon butter and cook 1 small onion until translucent. Stir in the 2 cloves garlic, ¼ teaspoon salt and ¼ teaspoon ground black pepper and a dash of nutmeg. Cook for just a minute, stirring frequently and remove from heat.
Stir onions and spinach into cream cheese until well mixed. Fold in 4 ounces crumbled feta cheese and pour filling into chilled pie crust.
Bake for about 40 minutes or until just set in the middle.
Allow to cool for at least 10 minutes before slicing. It is best served warm, but is delicious at room temperature as well.
