Arrange the croissants in the greased pan. Sprinkled cooked sausage crumbles around the croissants.
In a mixing bowl, whisk together the milk, eggs, brown sugar, vanilla, cinnamon, and salt.
Pour the custard mixture over the croissants. Cover the dish and soak for at least 2 hours, but overnight is better. If you can, flip the croissants once or twice to make sure they are getting evenly soaked in the custard mixture. For the prettiest presentation, make sure you bake them with the top side up.
When ready to bake, preheat the oven to 350℉ and pull the casserole out of the fridge to take the chill off.
Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes or until set in the center.
Cool for 10 minutes before serving. Store the leftovers in an airtight container in the refrigerator for up to 4 days.
Notes
If you prefer a more even distribution of sausage, you can cut the croissants into bite sized pieces. For easy variations, you can use crumbled bacon instead of sausage. Or leave the meat out and serve it plain or use berries instead.
