Rhubarb Snack Cake

This simple cake studded with bits of rhubarb for a perfect way to celebrate the season. It's quick to make and perfectly straddles the line between sweet and tart. are. It is a fun treat that is a perfect addition to you spring and summer baking lineup.

Ingredients

  • 3-4 cups rhubarb about 12-16 ounces
  • ¾ cup salted butter softened
  • 2 cups granulated sugar
  • 3 large eggs
  • ½ teaspoon vanilla extract
  • 2 cups all-purpose flour

Instructions

  • Preheat the oven to 350°F and grease a 9×13-inch pan.
  • Wash the rhubarb and chop into small pieces.
  • In your mixer, beat together ¾ cup salted butter and 2 cups granulated sugar on medium high until they are light and fluffy (about 3 minutes).
    Mixer bowl with fully creamed and fluffy butter and sugar inside.
  • Add 3 large eggs and ½ teaspoon vanilla extract and beat on high for 6 more minutes.  The mixture should be thick, creamy and voluminous.
    Thick aerated butter, sugar, and egg mixture ready for flour.
  • Stir in 2 cups all-purpose flour until just combined.

  • Fold in 3-4 cups rhubarb.
  • Spread the batter in your prepared pan and bake for 40-45 minutes. The top should be lightly golden and an inserted toothpick should test clean.
