Ramen noodle coleslaw features plenty of crunch from the uncooked ramen noodles and almonds. The simple dressing add big flavor, but comes together with just a few ingredients. This easy side dish is perfect for potlucks, or make some to serve with whatever you put on the grill.
In a separate bowl, add olive oil, sugar, soy sauce and rice vinegar. Mix well and pour over the slaw. Mix well with a large spoon.
Break the ramen noodles into bite sized pieces and add to the bowl.
Add almonds and toss until thoroughly combined.
Notes
Serve immediately or chill until ready to serve.
If making ahead, wait to add the ramen until ready to serve. That way it will be nice and crunchy.
Feel free to make this your own. You can add green onions, cilantro, sesame seeds, mandarin oranges, or whatever sounds good to you. Or add some leftover chicken and make a meal of it.
