Ramen noodle coleslaw is loaded with crunch from uncooked ramen noodles and almonds, plus a simple dressing that delivers big flavor with just a few ingredients. Start with a bag of coleslaw mix and broccoli slaw. There's no chopping, no cooking, just a seriously tasty side dish. It's perfect for potlucks or alongside anything hot off the grill.
In a large bowl, combine the 14 ounces bagged coleslaw mix and 12 ounces bagged broccoli slaw mix.
In a separate bowl, add ½ cup olive oil, 1 Tablespoon granulated sugar, 1½ Tablespoons soy sauce and ¼ cup rice vinegar. Mix well and pour over the slaw. Mix well with a large spoon.
Break 2 packages ramen noodles into bite sized pieces and add to the bowl.
Add ¼ cup slivered almonds and toss until thoroughly combined.

Serve immediately or chill until ready to serve.
If making ahead, wait to add the ramen until ready to serve. That way it will be nice and crunchy.
