Peach Pasta Salad
Peach pasta salad is a perfect summer side dish or a great light lunch. The homemade peach vinaigrette is yummy too. Make an extra batch to use on green salads as well.

Ingredients

Bow Tie Pasta
or other small shape

can peach slices

extra virgin olive oil

Dijon mustard

apple cider vinegar

kosher salt

ground black pepper

ounces
fresh spinach

cup
fresh basil

cup
diced sweet onion

Instructions
Cook pasta to al dente in salty water. Drain and rinse the pasta.
While the pasta is cooking drain the can of peaches, but save 1/4 cup of the juice.
Add the oil, mustard, vinegar, salt and pepper to the peach juice. Stir to combine.
Place cooked pasta in a large mixing bowl. Add dressing and stir to coat. Cover and chill until completely cooled.
Roughly chop spinach, basil, and peaches.
Add diced onion, cheese, spinach, and peaches to the pasta and mix to combine.
Refrigerate until ready to serve.
Notes
To make this pasta salad a meal, mix in some cooked chicken, shrimp, or salmon.
