These simple date cookie bars are an old-fashioned delight. They take just 4 ingredients and a few minutes to put together. The results are chewy, caramel-y, and delicious. Let's help this classic recipe make a comeback!
Preheat your oven to 350℉ and line an 8-inch baking dish with parchment paper. (Grease the pan well if you don't have parchment paper.)
Remove the pits from 1½ cups dates if necessary. Then give chop them coarsely. They don't have to be tiny pieces but you do want them small enough to distribute throughout the bars.
In a mixing bowl, stir together the chopped dates, 1 cup graham cracker crumbs, 1 14 oz can sweetened condensed milk, 1½ teaspoons lemon zest, and 1 Tablespoon lemon juice.
Spread the mixture in the prepared pan.
Bake for 30 minutes.
Cut into squares and cool before serving.
Notes
If you are using jarred lemon juice, just omit the lemon zest.
