Oatmeal chocolate chip cookies in a jar are a great edible gift idea. You can also make several jars to store in your pantry for easy cookies later. Either way, they are simple to make and taste fabulous!
Put ½ cup chocolate chips on the bottom of the jar.
In a small bowl, stir together the 1⅓ cups all-purpose flour, ¾ teaspoon baking powder, ½ teaspoon baking soda, and ½ teaspoon salt. Layer over the chocolate chips in the jar.
Continue to layer with the ½ cup light brown sugar, ½ cup granulated sugar, and 1 cup old fashioned oats. Pack the layers down as you go to make sure there is enough room for everything in the jar.
Place the lid on the jar and tie a tag onto the jar with the baking instructions.
Homemade cookie mix can be kept in the pantry for 6-9 months. So you can make a bunch ahead of time if you would like.
To Make the Cookies
In a medium or large bowl, stir together the melted ½ cup butter, 2 large eggs and 2 teaspoons vanilla extract.
Pour in the contents of the jar and mix until combined.
Chill for at least one hour but up to two days.
Preheat the oven to 375℉. Place 1 Tablespoon scoops of dough (or a small cookie scoop) about 2 inches apart on a cookie sheet.
Bake for about 8 minutes. Cool for a couple of minutes on the tray then move to a wire rack to cool completely.
Notes
If you prefer oatmeal raisin cookies, substitute raisins for the chocolate chips and add a little bit of cinnamon and nutmeg to the flour mixture.
