Cook 4 slices bacon in a large soup pot until crisp. Remove bacon from pan and allow to cool. Chop in small pieces and set aside.
Add 2 Tablespoons butter, 3 bay leaves, 1 Tablespoon chopped thyme and 3 small onions to the pot and cook until the onions are soft.
Add 3 pounds yukon gold potatoes and 6 cups fish stock. Bring to a boil for 12 minutes.
Reduce the heat to medium-low and add the 2 lbs cod and 2 lbs raw peeled shrimp. Simmer for 5 minutes. Remove from the heat and let sit for 10 minutes.
Stir in 3 cups cream and chopped bacon. Adjust salt and pepper to your taste.
