Jalapeno Popper Stuffed Chicken
If you like jalapenos and cream cheese, you are going to love these jalapeno popper stuffed chicken breasts. They are actually pretty simple to make and taste amazing with their slightly spicy creamy filling.

Ingredients
½
cup
pickled jalapeno slices
chopped
8
ounces
cream cheese
softened
2
cloves
garlic
minced

Tablespoons
crumbled cooked bacon
optional

boneless skinless chicken breasts
Salt and pepper to taste

vegetable oil
Instructions
In a medium bowl, mix jalapenos, cream cheese, garlic and bacon.
Cut chicken breasts about ¾ of the way through across the equator and fill with the cream cheese mixture.
Sprinkle chicken with salt and black pepper
In a cast iron skillet, heat oil over medium-high heat.
Place stuffed breasts in hot oil and brown for 4 minutes per side
Transfer skillet to oven and bake 5-7 minutes or until the internal temperature is 165° F.
