Homemade Chocolate Cake Mix

Next time you want a chocolate cake, instead of reaching for a box grab a homemade chocolate cake mix. You can whip up several in just a few minutes and there are no preservatives. Taking it from the jar to cake batter just takes a couple of standard ingredients and almost no effort.

Ingredients

Cake Mix

  • 2¾ cups all-purpose flour
  • ½ cup cocoa powder
  • 1½ cups granulated sugar
  • 2 teaspoons baking powder
  • 1 Pinch salt

To Make The Cake

  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup vegetable oil
  • ¾ cup milk
  • 1 cup hot water

Instructions

To Make The Mix

  • Mix together2¾ cups all-purpose flour, ½ cup cocoa powder, 1½ cups granulated sugar, 2 teaspoons baking powder, and 1 Pinch salt. Spoon the mixture into a quart jar or plastic bag for storage. Be sure to include baking instructions for reference later.

To Bake the Cake or Cupcakes

  • Mix the 2 eggs, 1 teaspoon vanilla extract, and ½ cup vegetable oil into the dry mix until batter is smooth.
  • Stir in the ¾ cup milk.
  • Add 1 cup hot water a little bit at a time, stirring until just combined after each addition.
  • Scoop batter into 24 cupcake liners or a 9x13 cake pan.
  • Bake at 350°F for 20 minutes for cupcakes or 350°F for 25 minutes for a cake. The cake is done when it springs back when lightly touched with a finger.
