A flaky pie crust loaded with warm flavors, oatmeal and coconut is a treat to be sure. Grandma spent years perfecting this recipe so you don’t have to. All you have to do is give it a try!
Mix together the 2 eggs, ¾ cups light corn syrup, ½ cup milk, ¼ cup butter, 1 Tablespoon vanilla extract, 1 pinch salt, ¼ cup all-purpose flour, 1 cup flaked coconut, and ¾ cups old fashioned oatmeal. Pour into prepared 9 inch deep dish pie crust
Bake at 350°F for about an hour
Allow to cool before slicing
Notes
The original recipe made two pies. I have reduced it so you can just make one. However, you can easily double the recipe for two pies. (There is a handy button in this recipe card for just that purpose!)
If you would like to freeze the extra pie, wrap it well in plastic wrap and place in the freezer for up to 3 months. Defrost in the refrigerator overnight before serving.
