Red cabbage braised with apples and warm spices is a little bit sweet, a little bit sour, and oh so vibrant on the plate. This German side dish is the perfect foil for a rich roast or a crispy schnitzel. If you are looking for a tasty way to enjoy red cabbage, you are in the right place.
Melt 2 Tablespoons butter in a large pot with a lid. A enameled Dutch oven works well for this.
Sauté 1 medium red onion in the butter over medium heat for a couple of minutes until they are translucent.
Quarter 1 medium or 2 small heads red cabbage and shred into small strips. Add to the pot with the onion. Sauté, stirring occasionally for about 5 more minutes.
Grate in 3 apples and add 3 Tablespoons apple cider vinegar, ½ cup water, 1 teaspoon salt, ¼ teaspoon grated nutmeg, pinch ground cloves, ¼ teaspoon ground black pepper, and ⅓ cup raisins. Cover and cook over low heat for about an hour.
Remove lid and continue to cook until the cabbage is soft and the liquid is reduced.
Stir in 2 Tablespoons lemon juice and adjust the seasonings to your liking.
