These fun Jell-O paw print cookies are colorful and delicious. Their fruity flavors are almost as fun as the white paw print decoration. They are a great dessert for so many occasions.
Preheat oven to 350℉ and line cookie trays with parchment paper or silicone baking mats.
In a large bowl, cream together 1½ cups unsalted butter and 1 cup granulated sugar until light and fluffy.
Add the 1 egg and 1 teaspoon vanilla extract, mixing until combined.
In a small bowl, stir together 3¼ cup all-purpose flour, 1½ teaspoons baking powder, and ½ teaspoon salt.
Add dry ingredients to wet ingredients. Stir until just combined.
Divide the dough into 4 parts and place in 4 bowls. Add 2 Tablespoons of Jell-O powder to each portion of dough. Knead the dough until the powder is incorporated.
Scoop 1 Tablespoon of dough. Roll into the corresponding color of Jell-O powder, then place on the lined cookie sheet. Continue to make balls of dough, spacing two inches apart on the cookie tray.
Flatten each ball slightly with the palm of your hand or the bottom of a glass or measuring cup.
Bake 8-10 minutes or until puffy but set looking.
Quickly place one melting disc and 4 white baking chips on each cookie to resemble a paw print. Allow to cool on the cookie sheet for about 5 minutes, then transfer to a wire rack to cool completely.
Store in an airtight container on the counter for up to a week or in the freezer for up to 3 months.
Notes
You can make all of the cookies one flavor if you would like, just grab a 6 ounce box of whatever Jello flavor you would like. Just add ½ cup of powder to the whole batch of dough.
Or make 2 colors with two 3 ounce boxes. Add ¼ cup of the powder to each half of the dough.
