Fruity marshmallow popcorn balls are a fun and easy treat that just take a few minutes and a few ingredients. The Jell-O powder adds both fun fruity flavor and a pop of color. Pick your favorite flavors or or choose the colors to match your party's color scheme.
14-16cupspopped popcorn(2 3.3 oz bags microwave popcorn)
¼cupbutter
16ouncesmarshmallows
3ouncesJell-O powder
butter or shortening for greasing hands
Instructions
Prepare a piece of wax paper for later.
Pick any unpopped kernels from the popcorn. Set aside.
In a large microwave safe bowl or saucepan, melt together the ¼ cup butter and 16 ounces marshmallows until the mixture is smooth.
Stir in the 3 ounces Jell-O powder.
Pour over the 14-16 cups popped popcorn and stir to coat.
Grease hands and form into baseball sized balls. Place on wax paper to set. Add more grease to hands as necessary and keep forming balls until the mixture is all used.
Store in an airtight container once completely cooled or wrap individual balls in plastic wrap or cellophane bags. They are best in the first day or two, but will store for several days at room temperature.
Notes
You can use freshly popped popcorn or a couple of bags of microwave popcorn for this recipe. A little salt and butter flavor adds a nice contrast to the marshmallows, but I would avoid strongly flavored or movie theater butter style popcorn.
A 10 ounce bag of marshmallows will be enough to hold the balls together, but a 16 ounce bag gives a softer, almost gooey texture which is a nice contrast to the crunchy popcorn.
