Two ingredient vanilla fudge is rich, creamy and delicious. Best of all, it is super simple to make. You don't need a candy thermometer, just a microwave or a double boiler.
Line an 8x8 pan with parchment paper or aluminum foil. Set aside.
Place 12 ounces white baking chips in a medium mixing bowl and microwave on high for 30 seconds, then stir. They won’t be fully melted, but that’s fine.
Add 14 ounces sweetened condensed milk to the bowl with the partially melted chips and microwave for another 20 seconds, then stir. Keep microwaving in 20 second bursts until the mixture stirs smooth.
Pour the mixture into the prepared pan and spread even, tapping the pan on the counter to flatten.
Place in the fridge for 4 hours or until set.
Using a sharp knife, slice the fudge into 1-inch pieces and enjoy!
Notes
Be careful to not overcook the baking chips. They scorch easily. Do short bursts in the microwave with plenty of stirring between.
If you don't like using the microwave, you can melt the white chocolate chips and condensed milk together in a double boiler.
Store fudge in an airtight container in a cool place for up to a week. You can refrigerate it for up to 3 weeks. Or freeze it for several months of storage.
