Make delicious maple cinnamon granola in your crockpot! This simple recipe doesn't require you to turn on the oven. It takes simple pantry staple ingredients and turns them into a great homemade granola that is cheaper and more tasty than store bought.
Spray slow cooker insert with nonstick cooking spray.
Stir together ½ cup coconut oil or butter, ½ cup maple syrup, ½ cup light brown sugar, 2½ teaspoons ground cinnamon and 1 dash salt. If desired add up to a cup of shredded coconut and/or pecans.
Add 5 cups old fashioned oats and stir to coat.
Turn slow cooker to high heat and place lid on top, leaving a gap for steam to escape. Cook for 2-2½ hours, stirring every 30 minutes.
Spread cooked granola over wax paper to cool completely before storing
Store in an airtight container at room temperature for up to a month.
Notes
The granola shouldn't get very dark in color. If it looks or smells like it is cooking faster than it should, turn the slow cooker down to low.
