Turn a bag of dried beans into a crockpot full of sweet and savory baked beans with very little effort. Other than soaking the beans, this recipe is practically dump and go. You'll never reach for a can again!
Sort 1 pound dried pinto beans and place them in a large mixing bowl. Fill the bowl with water until it sits 3 inches above the beans (they will expand).
Add ¼ teaspoon baking soda to the bowl of beans and stir. Let rest overnight or for 12 hours.
When you are ready, rinse the beans and place them in your slow cooker.
Add ½ pound bacon, 1 medium onion, 1 jalapeno, 3 cups chicken stock, 1 cup light brown sugar, ¼ cup tomato paste, 1 Tablespoon yellow mustard, 1 Tablespoon liquid smoke, 1 Tablespoon paprika, 2 teaspoons salt, 2 teaspoons minced garlic, and 1 teaspoon ground cumin.
Stir, cover, and cook on low for 8 hours or high for 6 hours.
Give the beans a stir. Then allow to sit with the lid cracked for 30 minutes while the beans soak up a bit more of the liquid before serving. Or, hold on warm until ready to serve.
Notes
Leftovers can be stored in an airtight container in the fridge for up to a week. For longer storage, freeze for up to 3 months.
