This slow cooked creamy taco soup is rich, hearty, and loaded with Tex-Mex flavor. The combination of ground beef, tomatoes, green chiles, beans, corn, and taco seasoning is a good start. It is finished with a touch of cream and melted cheese which takes it to the next level. It is a great dump and go dinner that is perfect for busy weeknights. It is also great for game day and more.
Place 1 pound lean ground beef, 1 teaspoon salt, ½ teaspoon ground black pepper, 1 small onion, 3 garlic cloves, 1 1 oz. packet taco seasoning, 1 teaspoon chili powder, ½ teaspoon ground cumin, 1 10 oz can Rotel , 1 15 oz. can diced tomatoes, 1 15 oz. can tomato sauce, 2 cups beef broth, 1 15 oz. can black beans, 1 15 oz. can pinto beans, and 1 15 oz. can whole kernel corn in the insert of a large crockpot.. Stir well to combine.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
Add 1 cup heavy cream and 2 cups freshly shredded sharp cheddar cheese. Stir until the cheese is melted and the soup is creamy and smooth.
Ladle into bowls and serve with your favorite toppings.
