Turn leftover pulled pork into a completely different meal with this fun creamy bbq pulled pork spaghetti. It comes together quickly and is the perfect combination of creamy, sweet, tangy and meaty. It is a great way to switch it up and get dinner on the table!
Preheat oven to 350°F. Grease pan. I used a 12-inch cast iron skillet, but you could easily adapt and bake it in a 9×13 pan.
In skillet over low heat, stir together 3 cups pulled pork, ⅔ cup your favorite barbecue sauce, 12 oz. can diced tomatoes and 4 oz cream cheese. Stir until cream cheese is melty and incorporated.
Stir in 12 oz pasta (cooked) and ½ cup green onions until combined. Spread evenly in pan and then top with 1½ cups shredded cheese.
Bake for 10-15 minutes or until cheese is melted and casserole is heated through.
Serve with desired toppings.

This recipe also works well with leftover BBQ chicken.You can use more or less pulled pork based on what you have. Great topping ideas: chopped tomatoes, cilantro, green onions, BBQ sauce, jalapenos and more!
