Make you own cake mix with plenty of colorful sprinkles. This homemade cake mix is great to have in your pantry or give jars aways as fun edible gifts.
In a large bowl, stir together the 2⅓ cups cake flour, 1½ cups granulated sugar, 1 Tablespoon baking powder, and ½ teaspoon salt.
Add the ½ cup shortening and 1 teaspoon vanilla extract. Mix on low until you get really small even crumbs.
Transfer the mix to a quart jar or other storage container. You may have to pack the mixture down a bit to get it to fit. Place ½ cup sprinkles in a small bag and include with the mix.
Add a tag or label with the baking instructions for later. Store at room temperature for up to a couple of months or freeze for up to a year.
To Bake The Cake
Preheat oven to 350℉ and grease a 9x13-inch pan or two 9-inch round pans.
Empty the mix into a large bowl. Add 2 large eggs, 1 cup milk, and 2 Tablespoons oil.
Mix on low speed until combined. Then mix on medium for 1 minute. Stir in the sprinkles.
Transfer the batter to the prepared pan(s).
Bake 30-35 minutes for a 9x13-inch pan or 25-30 minutes for 9-inch rounds.
Allow to cool before topping with your favorite frosting.
Notes
You can use all-purpose flour in place of the cake flour if you want. The texture just won't be quite as light. Or make your own cake flour by taking a cup of all-purpose flour and removing 2 Tablespoons. Replace it with 2 Tablespoons of cornstarch. Mix to combine.
