Chocolate covered cherry blossom cookies are built on soft fudgy chocolate cookies topped with gooey candied cherries. These homemade cookies are a great dessert for the holidays or any day.
Freeze 30 chocolate covered cherries for at least an hour before starting.
Preheat oven to 350°F. Line cookie sheets with parchment paper or a silicone baking mat.
Cream together ¾ cup butter, ½ cup granulated sugar and ½ cup light brown sugar until the mixture is light and fluffy.
Add 1 large egg and 1 teaspoon vanilla extract, stirring to combine.
Stir in 1½ cups all purpose flour, ½ cup unsweetened cocoa powder, 1 teaspoon baking soda, and ¼ teaspoon salt until combined. The dough will be a little bit soft.
Use a small cookie scoop to portion out about 1 Tablespoon of dough onto the sheet pan. Leave 2 inches between cookies.
Bake 7-9 minutes or until the tops look set.
Push a frozen cordial cherry into each cookie while they are still hot.
Allow the cookies to cool completely before removing them from the pan.
