Chocolate chip meringue bars, or mud hen bars, are built on a shortbread style cookie crust topped with chocolate chips and brown sugar meringue. The results are a delicious dessert that has the perfect combination of flavors and textures.
Cream together butter, brown sugar, and sugar in a medium mixing bowl.
Add cold water, and vanilla, stirring to combines.
Add flour, salt, and baking soda to the butter mixture. Stir until incorporated.
Press the cookie mixture into the prepared baking pan to form a crust.
Sprinkle chocolate chips over the cookie dough.
In a clean mixing bowl, whip the egg whites to medium peaks, then slowly start to add remaining cup of brown sugar while mixing until the sugar is completely incorporated. Continue to whip until you have stiff peaks.
Spread the meringue topping over cookie dough and chocolate chips.
