If you are looking for a potato salad with huge flavor, this blue cheese potato salad may be just the thing. The dressing features blue cheese and sour cream and we added in some bacon for good measure. If you love blue cheese, this is the one for you!
optional: ½ cup chopped celery, ½ slivered almonds, fresh parsley or chives
Instructions
Place potatoes in a pot of water. Bring to a boil and cook for about 10-15 minutes or until soft but not mushy. Allow to cool. Peel if desired and then cut into bite sized pieces.
In a large mixing bowl, stir together the remaining ingredients.
Add the potatoes to the bowl and stir to coat. Cover and chill for at least an hour.
Garnish with fresh herbs if desired.
Notes
This potato salad has a strong blue cheese flavor. If you want a milder flavor, add 2 ounces of blue cheese and then taste. Add more until you get your desired flavor.
