This black and blue steak salad is the dinner salad to top all dinner salads. Lots of greens and veggies topped with flavorful steak and homemade blue cheese dressing makes for a meal worth getting excited about. Add a little chimichurri if you feel like getting extra fresh. This might just become your new favorite summer supper.
Stir together the ingredients for the blue cheese dressing and refrigerate until ready to use.
In a small bowl, drizzle vinegar over sliced red onions. Set aside and allow to soak while preparing the salad.
Wash and dry the greens. Chop into bite sized pieces and place in large serving bowl.
Drizzle greens with desired amount of blue cheese dressing.
Top with cucumbers, tomatoes, sliced hard boiled eggs, blue cheese crumbles and onion slices.
Heat a skillet over medium high heat. Add steak slices and cook for about 2 minutes or until just warmed through. Arrange over salad in bowl.
If desired, drizzle with chimichurri sauce before serving.
Enjoy right away.
Notes
If you don't like blue cheese, use your favorite cheese instead. Then use ranch dressing or make your favorite salad dressing. There is a recipe for a mustard vinaigrette included in the post.
