Beach Brownie Bites

These Beach Brownie Cups are such an adorable summer treat and perfect to make with kids. You start with a brownie mix and make your little brownie cups, add in a blue buttercream for water, a candy float and a little teddy bear cookie to make these super cute. These are always a hit, taste delicious, are fun to make with the kids and perfect for summer!

Ingredients

  • 18.3 ounce box of brownie mix plus ingredients on box
  • 1 cup unsalted butter softened
  • 3 cups powdered sugar
  • 2 teaspoons vanilla extract
  • blue food color
  • 48 gummy Life Savers or similar
  • 48 Teddy graham cookies

Instructions

Brownie Bites

  • Preheat your oven to 350℉.
  • In a large bowl combine the brownie mix with the water, eggs and oil your particular box mix calls for.
  • Fill each mini muffin well ¾ of the way up ( you may need to do this in batches)
  • Bake for 15 minutes or until a toothpick inserted in the middle comes out clean.
  • While the brownie cups are still warm use a teaspoon to press down the center to create a cup shape.
  • Set aside to cool completely.

Buttercream

  • In a medium mixing bowl, beat the butter until smooth.
  • Add the powdered sugar and vanilla, mix until combined.
  • Add a drop or two of blue food coloring. Beat until fluffy and smooth. Add more blue food coloring if the needed until you get your desired shade.

Assembly

  • Spoon or pipe your buttercream into the brownie cups.
  • Top each one with a gummy ring candy.
  • Place a teddy graham into the middle of each candy ring.

Notes

  • You may need to snap the legs off the teddy grahams to get them to fit into the rings.
  • If the teddy cookies are a tight fit for the ring candy try placing the cookies into the gummi rings before placing on the brownie cup.
