Slow Cooker Maple Cinnamon Granola
This slow cooker maple cinnamon granola could not be easier to make. It is sweet, crunchy and perfect as a snack or breakfast.

Ingredients

cups
old fashioned oats
½
cup
coconut oil or butter
melted
½
cup
maple syrup
½
cup
light brown sugar
2½
teaspoons
ground cinnamon
1
dash
salt
optional: pecans or coconut
Instructions
Spray slow cooker insert with nonstick cooking spray.
Stir together coconut oil, maple syrup, brown sugar, cinnamon and salt. If desired add up to a cup of shredded coconut and/or pecans.
Add oats and stir to coat.
Turn slow cooker to high heat and place lid on top, leaving a gap for steam to escape. Cook for 2-2.5 hours, stirring every 30 minutes.
Spread cooked granola over wax paper to cool completely before storing
Store in an airtight container at room temperature for up to a month.
Notes
The granola shouldn't get very dark in color. If it looks or smells like it is cooking faster than it should, turn the slow cooker down to low.
