Fresh pineapple casserole takes the king of fruit, butter crackers and cheddar cheese and turns them into something amazing. This recipe is both sweet and savory and is a perfect side dish to go with a holiday ham.
Preheat oven to 350°F and grease an 8x8" baking dish.
Remove core and skin from pineapple and cut fruit into bite sized pieces or smaller.
In a medium bowl, stir together sugar and flour. Add pineapple and stir to coat.
Spread pineapple mixture in the bottom of the baking dish.
Spread cheese over pineapple. Lightly crush crackers and sprinkle over the cheese.
Drizzle melted butter over the crackers, then bake for 40-45 minutes or until the pineapple juice is bubbly and thick and the crackers and golden brown.
