This cornflake crumb chicken is baked until the outside is nice and crispy but the meat is juicy and tender. It is a delicious way to get a fried chicken feel without having to get out the grease and fry anything. It is a classic dinner that our family loves.
In another bowl, mix corn flake crumbs and seasonings.
Dip chicken quarters in egg mixture and then the crumb mixture, making sure the coat the whole chicken piece.
Place on greased baking sheet and bake until crisp and golden brown (about 45 minutes to an hour). Use an instant read thermometer to ensure the chicken is fully cooked.
Notes
You can buy cornflakes already crumbed so they are uniform, or crunch up your own. Either way works.
