Nutter Butter balls are peanut butter cookie truffles dipped in chocolate. They are a fabulous no bake treat that are sure to become a favorite dessert.
Put peanut butter cookies in food processor and pulse until they are fine crumbs.
Add cream cheese and peanut butter. Process until it forms a dough. It may look a little crumbly, but should hold together when rolled into a ball. If it is too dry, add a tablespoon more peanut butter at a time until it holds together.
Use a small cookie scoop to portion out 1 Tablespoon of the cookie mixture. Roll into a ball and place on a wax paper lined cookie sheet. Continue until all of the mixture is rolled into balls.
Freeze for at least 30 minutes.
Melt chocolate in double boiler. Roll cookie balls in melted chocolate and place on wax paper. Quickly top with chopped nuts or sprinkles if desired. Continue until all truffles are dipped.
Allow to set up completely before transferring to an airtight container to store.
Notes
Cookie truffles can be stored at room temperature for up to 3 days. Refrigerate for up to 3 weeks or freeze for up to 3 months.
