Two ingredient caramel fudge is rich, creamy and delicious. Dulce de leche gives it a nice deep caramel flavor and smooth texture. Best of all, it is super easy to make!
Place the white chips in a medium mixing bowl and microwave on high for 30 seconds. Stir well. Continue to microwave in 20 second bursts until you are able to stir it smooth.
Immediately add the can of dulce de leche and stir until fully combined. The mixture will get thick, that’s ok.
Transfer to the prepared pan and use a spatula to flatten and spread it so it's even throughout the pan.
Place in the fridge for 2 hours or until set. Slice into 1-inch pieces, serve, and enjoy!
Notes
Store in an airtight container in the fridge for up to 2 weeks or the freezer for up to 3 months.
I prefer the Nestle chocolate chips for this recipe because the various brands cause a bit different outcome and I can always count on Nestle for a consistent outcome.
It’s extremely important you do not heat this fudge over 240℉. This will cause the milk and sugar to separate, which results in almost a waxy look over your fudge. It can also cause it to be greasy before setting up. If this happens, it does not affect the flavor, but it does affect the appearance of the fudge.
If you can’t find dulce de leche (it usually in the baking aisle with the condensed milk), you can use other thick caramel sauce options. However, try to find a caramel sauce that doesn't list water as an ingredient.
