Tasty Greek nachos with all of the best toppings on top make for a great appetizer or a fun dinner. Pile them up with gyro inspired meat, plenty of veggies and a drizzle of tzatziki.
Process the remaining onion, garlic and seasonings into a paste in a food processor or blender. Add a couple of teaspoons of water if needed to make a paste. (If you can't make a paste, finely dice everything and proceed.)
Put paste in pan with meat and continue to cook until the meat is cooked through and any excess liquid has evaporated.
Arrange chips over a rimmed sheet pan. Top with meat and feta cheese.
Put in oven for 7-10 minutes.
Sprinkle with reserved diced onion, tomato, and cucumbers. Drizzle with tzatziki.
