Optional mix-ins: chopped nuts or grated/diced apple
Instructions
Wash and peel beets, then grate. I used the medium holes on our box grater, but a food processor would work as well.
In a small mixing bowl, stir together the mayonnaise, sour cream and apple cider vinegar. Season with a pinch each of salt and pepper and the garlic powder.
Stir in the beets and raisins. Cover and refrigerate until ready to serve.
Stir in chopped nuts or apples if desired and garnish with fresh herbs.
