Flavorful and easy, this Parmesan roasted acorn squash comes together quickly in an air fryer. It takes just a few minutes to prep and less than 15 minutes to cook to tender deliciousness.
1large or 2 small acorn squashor 2-3 medium delicata squash
1Tablespoonolive oil
½teaspoondried thyme
½teaspoonsalt
¼teaspoonground black pepper
¼cupgrated Parmesan cheese
Instructions
Wash the exterior of the squash, then cut in half and remove all of the seeds. Slice into ¾″ slices.
In a large bowl, toss squash with the remaining ingredients. Place in air fryer basket.
Cook at 375°F for about 13 minutes. Check squash as it gets close to the end to see how it is going. Redistribute squash along the way if necessary. Squash should be fork tender and Parmesan should be golden.
