Ingredients

recipe pie crust dough
1½
cups
granulated sugar
1
Tablespoon
cornmeal
1
Tablespoon
all-purpose flour

eggs
¼
teaspoon
salt
1
cup
crushed pineapple
drained
2½
cups
flaked coconut
¼
cup
butter
melted
Instructions
Preheat oven to 325°F and prepare pie plate and pie crust.
Beat together sugar, corn meal, flour, eggs and salt until smooth and well combined.
Stir in drained pineapple, coconut and melted butter.
Pour filling into crust and bake for 50-60 minutes or until just set and a bit golden on top.
Cool completely before serving.
Store in the refrigerator but allow to sit at room temperature for a bit before serving if possible.
