This chocolate fudge recipe with marshmallow fluff is a classic for good reason. It makes rich, creamy chocolate fudge. Add nuts if desired, or try experimenting with different flavoring extracts if you would like. However you decide to dress it up, this is sure to be your go to fudge recipe.
Grease a square baking dish or line it with parchment paper.
In a large heavy bottomed saucepan, stir together butter, sugar and evaporated milk. Warm over medium heat, stirring frequently until the sugar is dissolved.
Once the mixture is at a full boil, allow maintain a rolling boil for 5 minutes or until it reaches between 235-240°F on a candy thermometer.
Remove from heat and stir in chocolate until it is completely melted and smooth.
Mix in the marshmallow cream and vanilla. Add nuts or other mix-ins if desired.
Spread in prepared pan and and let cool until set. Then cut into squares.
Store in an airtight container.
Notes
Using a thermometer will help you to get the perfect fudge texture every time. If you don't have a thermometer, boiling the mixture for 5 minutes should get you close to 235°F.This recipe works with bars of semi-sweet chocolate or chocolate chips.For thinner fudge, use a 9x13-inch pan. This will allow you to get more servings from the recipe.
